Garden Specialty Salad with Chocolate Cherry Chip Cookies

Garden Specialty Salad

Ingredients:

 

  • 2 limes
  • ½ tsp sugar
  • 4 large portabella mushrooms, de-stemmed and cleaned
  • 2 onions finely chopped
  • 4 tomatoes, finely chopped
  • ½ cucumber, finely chopped
  • 1 green chilli finely chopped
  • 1/3 cup freshly chopped cilantro
  • fresh mint to garnish
  • extra virgin olive oil
  • salt and pepper

 

Instructions:

 

  1. Squeeze lime juice into a bowl and add sugar, salt, and freshly cracked pepper stir to dissolve.
  2. Add the onions, tomatoes, cucumber, chilli, and cilantro a large bowl and pour the lime juice mixture over the salad. Set aside.
  3. Brush the portabella mushrooms with olive oil and grill for about 2 minutes on each side.
  4. Toss the salad with the lime juice mixture.
  5. Slice the mushrooms into strips and serve on top of the salad.  Enjoy!

 

 

Easy Pickle Beets and Cucumbers

Ingredients:

 

  • 1 cup cider vinegar
  • 2 cups water
  • 1 tbsp freshly chopped dill
  • 1 tsp whole mustard seeds
  • 1 tbsp sugar
  • 4 bay leaves
  • 1 medium onion, sliced
  • 2 cucumbers, peeled, sliced
  • 4 beets, peeled, cooked, and sliced into bite size pieces

 

Instructions:

 

  1. In a large bowl combine the cider, water, dill, mustard seeds, sugar, bay leaves and onions.  Stir to dissolve the sugar.
  2. Dived the pickling liquid into two bowls.  In one bowl add the sliced cucumbers, in the other bowl and the sliced beets.  Let the cucumbers and beets marinate for about 1 hour.  Serve and Enjoy!

 

 

Chocolate Cherry Chip Cookie

Ingredients:

 

  • 1 cup softened butter
  • 3 cups sugar
  • 3 large eggs
  • 1 cup cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tbsp vanilla
  • 3 ½ cups flour
  • 2 cups dried cherries (coarsely chopped)
  • 2 cups semi sweet chocolate chips

 

Instructions:

 

  1. In a large mixing bowl combine the butter and the sugar.  Blend for approximately 3 minutes.
  2. Add the eggs one at a time and incorporate completely.
  3. Add the, cocoa powder, baking powder, baking soda, salt and vanilla.  Mix to blend.
  4. Add the flour, dried cherries, and chocolate chips.  Blend just until the flour is incorporated.
  5. Portion cookies onto a prepared baking sheet and bake in a 325 degree oven for about 15 minutes or until done.
  6. Remove from oven and allow cookies to remain on the baking sheet for about 5 minutes.  Remove and place on a cooling rack to finish cooling.  Serve and Enjoy!
