Mediterranean Orzo


Mediterranean Orzo

  • 1 cup orzo
  • 2 chicken breasts, chopped
  • 1 cup diced onion or one onion, diced
  • 1 tbsp tomato paste
  • 4 roma tomatoes, diced
  • 1/4 tsp cinnamon
  • 1 tsp red pepper flakes
  • zest and juice from one lemon
  • 1 tbsp freshly chopped mint
  • chicken stock
  • salt and pepper to taste
  • extra virgin olive oil


  1. Heat a large saute pan on the stove and add enough olive oil to lightly coat the bottom.
  2. Saute the chicken breast until golden and then add the tomato paste. Mix together.
  3. Add enough chicken stock to cover the chicken pieces and continue cooking until they are cooked through. If needed, add additional chicken stock.
  4. Add the orzo, tomatoes, cinnamon, pepper flakes, lemon juice and zest, and mint. Gently stir to combine. If needed, add some additional chicken stock.
  5. Continue cooking until orzo has cooked through. Serve and enjoy!
