Shrimp Scampi Pizza with Arugula and Blue Cheese

Garlic Shrimp Scampi Pizza with Arugula and Blue Cheese

 Ingredients:

 

  • Prepared Pizza Dough (recipe below)
  • Prepared Shrimp Scampi (recipe below)
  • 4 cups washed and dried arugula
  • 1 cup crumbled blue cheese
  • 1 cup freshly chopped parsley

 

Instructions:

 

  1. Brush the prepared (baked) pizza dough with some of the garlic butter from the shrimp scampi.
  2. Sprinkle the crust with blue cheese and the arugula.
  3. Top with cooked shrimp scampi and freshly chopped parsley.  Slice and Enjoy!

 

For the Dough:

 

Ingredients:

 

  • 2 ½ cups water
  • 1 tbsp yeast
  • 1 tsp baking powder
  • 1 tbsp vinegar
  • ½ cup Extra Virgin Olive Oil
  • 3 cups flour
  • 1 tbsp salt
  • 2 cups (more for dusting)

 

Instructions:

 

  1. In a large mixing bowl, combine the water and yeast.  Mix together and allow to rest for about 10 minutes to re-hydrate the yeast.
  2. Add the remaining ingredients and knead thoroughly for about 10 minutes or until the dough is smooth.  If more flour is needed, sparingly dust the dough mass as your kneading it to prevent it from sticking to your hands.
  3. Place the dough into a well greased bowl and allow dough to double in size.
  4. Once the dough has doubled in size, remove from the bowl and place on a lightly floured work surface.
  5. Allow the dough to sit for about 5 minutes.
  6. Shape the dough in the desired shape of your pizza and bake in a 450 degree until golden brown.

 

Shrimp Scampi

Ingredients:

 

  • 1 1/2 pound shrimp
  • 4 tbsp butter
  • 1 tbsp garlic, minced
  • 1/4 cup white wine
  • juice from one lemon
  • 2 tbsp freshly chopped Italian parsley
  • salt and pepper to taste

 

Instructions:

 

  1. Peel and devein the shrimp if necessary.  Rinse off and set aside until ready to use.
  2. Heat a large saute pan on the stove and add the clarified butter.
  3. Once the butter is hot, add the shrimp being careful not splash hot butter onto your skin.
  4. Sprinkle the shrimp with salt and butter and cook for about 1 minute and then turn the shrimp.
  5. Add the minced garlic, white wine, and lemon juice to the shrimp.  Continue cooking until the shrimp are fully cooked.
  6. Sprinkle with chopped parsley.

Mixed Green Salad with Dijon Balsamic Vinaigrette

Ingredients:

 

  • 6 cups mixed greens
  • ¼ cup balsamic vinegar
  • ½ cup extra virgin olive oil
  • 1 tbsp Italian Herb Blend
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • 2 tsp freshly cracked pepper
  • 1 tsp salt

 

Instructions:

 

  1. Wash and dry the mixed greens and place in a large bowl.  Set aside.
  2. To make the dressing, place the dressing ingredients (balsamic vinegar, extra virgin olive oil, Italian Herb Blend, Dijon mustard, sugar, black pepper, and salt into a pint size glass jar that has a sealable lid.  I like to use a Mason Jar.
  3. Place a lid on the jar and shake ingredients together to mix. Set aside until ready to use.
  4. Pour just enough dressing over the greens to lightly coat them, toss and serve.  Refrigerate remaining dressing for up to one week (but be sure to use it up during the week).
