(Greek Spinach Pie)

Recipe Courtesy Melinda Kalodimos Salt Lake Greek Festival




  • 30 oz. fresh spinach, washed, dried, and cut into bite size pieces.  I remove thick stems as well
  • 1 lb. feta cheese crumbled
  • 1 lb. 2% lowfat cottage cheese
  • 1 large chopped onion
  • 3 Tbls.  dill
  • 8 beaten eggs
  • 2 Tbls. olive oil
  • 2 heaping Tbls. Flour (this soaks up any water from spinach)
  • Salt and Pepper to taste
  • 15 layers of phyllo pastry dough, thawed overnight in fridge from freezer
  • At least two sticks butter, melted




  1. Mix all ingredients together in super large bowl with your hands.  Place nine sheets of phyllo pastry sheets on bottom of 11X17 pan spreading melted butter on each sheet using pastry brush.  Put spinach mix in pan and spread evenly.  Place six layers of phyllo pastry sheets on top spreading melted butter on each sheet.  Put pan in fridge for one hour to harden butter on phyllo.
  2. Preheat oven to 350 degrees.  Cut through top six layers of phyllo in 35 squares to mark pieces.  Bake for 45-50 minutes till phyllo is golden brown.  Let stand for 15 minutes before cutting through to bottom of pan to separate pieces.
